'This is a authentic #Srilankan Malay Recipe. Not very popular as many people from Srilanka are not accustomed to eating meat this way. However this is also a form of respect to the sacrificial cow or goat and also about not wasting food, so from the head to the hoof is consumed speacialy by the minority groups. This is a beloved recipe by the Srilankan Malay (malaysian) community because of its unique flavour and taste and the mix of the beef tripe and intestines are commonly known as #BABATH in Srilanka. Very fatty and cooked in a curry this way brings out all the joy. It\'s usually paired up with #pittu a rice and flour mixed  However you can enjoy this with rice and veggies the Sri Lankan way or with Bread or roti. Please note my grand ma is very old and traditional woman and this is the way she cooks, So if you are irked by this or the fact that it\'s meat this video is not for you. But if you have no problem I hope you enjoy my first vlog style video and hope you make this really delicious curry.   ingredients and steps are listed below-   •FOR  500grms of Tripe and intestines of the cow.  (250grms each and you can use only tripe of you wish)  STEP 1-  •Wash it well with boiling water and 1 table spoon of vinegar to cut out any chemicals use. For the final wash add a dash of TURMERIC not saffron. (Please excuse the fact that my grand ma calls saffron turmeric, it\'s a srilankan thing)   •Squeez out all the water and cut into desired pieces.  STEP 2: Spice rub and boil-   •2 full teaspoon of chilli powder.  •2 teaspoon of coriander powder.  •2 table spoon of Tamarind juice.  •Pinch of turmeric.  •Rock salt to taste.  •1 full teaspoon of crushed ginger garlic.  •1 inch cinnamon stick.  •2/3 Cardomn pods.  •2/3 Cloves.  •Water just enough to cover the meat.    Rub all the spices onto the cut meat pieces ans boil for one hour and until meat is soft. Please keep checking and add more water if required. But not too much.   STEP 3: A quick Oil fry-   •2 table spoons of coconut oil heated in a fry pan •Few curry leaves.  •1 inch pandan leaves cut into pieces.  •1 full teaspoon of crushed ginger garlic paste.  •2 small red onions finely sliced.  Fry them till golden brown and then add,  •1 full teaspoon of Sri Lankan dry roasted curry powder.  •1 full teaspoon of of chilli powder.  •1 full teaspoon of of coriander powder.  Do a quick fry to release flavour and then add to the curry and close the lid to trap the aroma.   STEP 4-  Add 1/2 cup of thick coconut milk to the residue from the fry pan and scrape off all the excess and add that to the curry and close the lid to trap the flavour and mix well after one minute.
